Dominican Meringue Frosting Help!!!!!!

AHas anyone ever tried to refrigerate or freeze this frosting? Does it do well in the heat? Are you able to substitute egg whites with meringue powder with this frosting?

I think it depends on your exact recipe. I'm Dominican and I use my family recipe which is basically an Italian Meringue. It's very stable even on the hottest days. DR is a tropical country and it's the usual frosting for cakes.

 

The frosting can be refrigerated with no problem, but I've never heard of anyone trying to freeze it.

 

My mother once made her frosting with powdered egg whites and it didn't come out with the right texture. It didn't whip ups anything like usual and was much stickier. I've never seen it tried with meringue powder.

AThanks so much for info and sorry for late reply, I'm still thinking if I should try the meringue powder lol but I'm leaning towards no since the egg powder didn't work for your mother : )
