I've been using the WASC recipe since May and love it. The last few times I have made cakes the tops are getting really dark and hard, almost burnt. The last time I used a heating core and lower the temp to 325 with the same thing happening! Does anyone know what is causing this to happen now and it never did before? I have an electric oven. Is it possible the stove is starting to die? Once I trim, the inside seems fine. The corners on the square cake is a bit hard but the taste seems good too. It's just very frustrating to have the burnt tops and hard sides. Any help in solving this is appreciated!

sounds like an oven problem to me
can you lower the oven rack any?
in the meantime maybe if you make an aluminum foil collar sticking up around the top of the pan it might help shield the hotter air that is burning the top
also either use the magic strips or wet toweling aournd the pan
and/or
place a pan of water in the bottom of the oven
the water ideas slow down the bake time but it's a possible work around
so frustrating--hope this clears up soon!
hey--is the oven door closing properly? if the door is not closed the oven will stay cycled on all the time
because ovens heat up and stop then heatup again of course cycling on and off maintaining the heat (in a perfect world :)
or
if the insulation strip around the ibside of the door needs to be replaced thta might be an easy fix if it might be that.
