I'm hoping someone out there can help me out.  I have a great cake recipe that I want to use for Christmas but the recipe is for a 2 layer cake and I want to make it in my igloo cake pan.  Can anyone tell me how to alter the oven temp and/or the baking time.  The recipe is for a sponge cake in 2 - 9" layers baked at 325 for 20 - 22 min.  I'm not even sure this recipe will bill my pan.  icon_rolleyes.gif

I looked at the Nordic Ware info--the pan is not quite 4" deep and about 8-9" diameter overall.

 

 

Do you have a heating core--a metal cup to insert into the batter to help bake such a deep cake? They are sold at many bakery supply sites. A very small metal mixing bowl would also work.  In such a case your recipe would more than fill the igloo pan.  Once you add the batter to 3/4 depth, put the pan onto a larger baking pan, insert the greased and floured cup, and bake until it tests done as usual. Yes it will overflow the fancy pan (into the drip pan).

 

Yeah baking with a heating core will make the igloo to be hollow (as they are in real life) so you can plan to fill it with some kind of mousse.

 

If you don't bake it hollow--I would suggest that you half fill the depth of your igloo pan, and that you bake a single 9" layer of your sponge. You will lose the bottom layer of igloo blocks, but your cake will be done in the same time that you usually bake. Both cakes would have to be trimmed flat. You would then ice the top of the round, add the igloo, and carve the bottom edge to fit.

Thanks for your reply.  I have the heating core bought it when I was having trouble with a 14" layer.  I don't care if it has a hole in the middle. I wan't sure if I should adjust the temp.  I'll let you know how I  make out.  Thanks again.
