I would like to make this cake. Just wondering, do I lay the fondant in one piece for the roof or in multiple pieces and join at the seams? Not sure how to get rid of the excess fondant for this triangular shape?

There is a Debbie Brown book on making this cake but it's out of print so I'm not sure of the name of it there are older post on here of people who have the book but I don't know if any of them are still members on here

I would suggest making the cake in two parts. Cover the house part in the fondant and do the details first. Then place the cake (shaped and butter creamed) for the roof on a thin cake board slightly wider, all round, than the house, to create the "overhang" or "eaves". Then place the red fondant icing over the roof and tuck it under the eaves. would suggest a little vodka or water to help stick the paste to the underside of the board. Score in the pattern while the fondant is still soft. Hope this helps.

Should I make the cake the entire shape of the doghouse including the pointed roof so that it is a bit of a trapezoid shape and add the roof on top of that? or make the cake a rectangle?

What would I do if I were starting from scratch???? I would take square cake tins (as I don't have a rectangle tin) and bake up a sponge mix. Then cut the cake to form the rectangle shape by cutting off down one side. Layer equal layers of the sponges with butter cream until you get the height required for the house section.I would then place this on a thin cake board the same size as the rectangle before placing on a larger board to be decorated with grass etc.( you can omit the small board and place it straight on the large board if preferred). Don't forget to put butter cream on the base of the board to prevent the cake from slipping off! Then make more square shape sponges the same size as the first batch. Then cut diagonally across. Layer each triangle on top of each other with butter cream placing on a thin cake board cut side down to shape the roof. Pop both cakes in fridge before butter creaming to chill for half an hour, then do a thin butter cream "crumb" layer. Pop back into the fridge for another half hour. Then do the final coat of butter cream. Knead, colour as required, then roll out the sugar paste and cover each of the cakes separately. I would be inclined to recess one side slightly to create the opening. Remember to make the indents of the roof tiles whilst the sugar paste is still soft. Place dowel sticks in the house section to support the roof.Again remember to add a little icing or buttercream on top of the recangle to stick the layers together. Embellish as required. Job done!
