Which Side Of Cookie Do You Ice?

Boss and I having argument on which side of cookie to put base coat when decorating or stencilling cookies.  She says you have to use bottom that was flat against the sheet.  I have never seen that done before.  While cookie would be flat on top it isn't level to lay down and full of craters.  I always the top side as it is smoothest... so what do you do?

I agree with you on cakes ..I flip them and use good side of cookie.  Hope to hear from others on this minor topic but it is driving me crazy
