Hi

Didn't know whom to ask so I'm going to post my doubts and hope some 1 will be able to guide me, better provide me details of how to achieve the decoration.

So here it is, below is the picture of edible chocolate decoration used in the cakes, I want to know how it is made, is there any tutorial where i can learn how to make such decoration.

What are the white lines on the chocolate is it coco butter, can i use chocolate candy colour like red or yellow instead of white to make it look more beautiful?  The below is the entire Dutch cake picture for reference.

I hope some body will be able to help me clear my doubt and provide me solution to achieve the decoration.

AIt looks like they used a chocolate transfer. You can browse them here http://www.globalsugarart.com/cat.php?cid=838&s=&name=Chocolate%20/%20fondant%20Transfer%20Sheets. Or just google it :)

You can look on youtube under how to make chocolate decorations, but I saw something that looked like this and what they did was: melt some white chocolate and drizzle it back and forth over a surface like waxed paper. Chill it until it sets up hard. Melt some dark chocolate, let it cool but not harden. Spread it thinly over the white chocolate lines, then let it set hard. Then just break the chocolate into pieces to use on your cake. Does that make sense?

To color the white chocolate or candy melts, use powdered color mixed with cocoa butter or ready-made oil-based color. Don't use regular gel or liquid food color.
