how far in advance can you make a cake without freezing it?

Hi, I'm new to the whole cake making for sale thing. I'm making a birthday cake for this coming saturday and my week is really crazy, so I'm limited on my time to work on it. I was wondering if I made the cake and covered it in fondant on wednesday if it would still be ok for saturday? Or is that too far in advance? I want to make sure it stays moist. I'm using the WASC recipe with buttercream frosting. 

I would appreciate any advise, thanks

why can't you freeze it? It should be ok from wednesday, but I would probably do it on the thursday if i could.

Should be totally fine if you made it Wednesday, especially since you're going to be icing it right away. That will keep it moist. So will covering it in fondant. Good luck!

for me that is too far in advance. i just don't think that the cake would still look up to par.  Why can't you freeze the cake and pre-assemble the elements (flowers, figures, borders?) earlier and then put it together closer to Sat?  

 

Considering that a cake usually has to rest for a day and then have time to settle once filled before putting on fondant, that would give you a cake 5-6 days post-baked by the time it is cut on Sat.
