I've never made them that's just how I would go about it if I did :) pretty sure it would work through, design-wise I'd make all the uprights first and have the chair seats and table top as flat squares that would just rest on top of the legs, and the chair back would attach maiinly to the figure as that would be stronger than assembling a little chair then sitting your little dudes on it.
If you're short on time the table top is going to be tough, you could try speeding up drying; for me I find keeping all the pieces on a piece flat of foam, a fan blowing over and a lamp with a warm bulb- either a special heat lamp or a non-energy saving bulb works- but I'd worry about large pieces so make spares and have a backup plan like; bake a square sugar cookie and pop a square of fondant on top like a tablecloth, or use a cracker, or a bar of chocolate (yum!).......
