I have a client that wants a cake topper like the one below on a cake order I have. I was thinking of making it out of sugar and painting on the monogram. Can anyone tell me if this is even feasible? I wonder about air bubbles and clarity of the sugar. I was planning on using an aluminum foil and a cookie cutter to shape the topper. Would I be able to remove it from the cutter?

Im no sugar expert by any means, but i can tell you that it may not work as you think. To get that thick of a piece of sugar to be perfectly clear will be rough... I would try to bail out of that idea asap and talk them into just the letter monograms, or ordering the glass one!
Try a compromise. Get a circle of acrylic and paint on or pipe on the monogram. It will be this nice and clear, and it will match the rest of the piping on the cake.
AI was thinking that too, but where would you find a circle of glass or acrylic? Maybe a jar lid?

You could make this. I would strongly recommend you do this out of isomalt and not just straight sugar. If you oil the cookie cutter, it should pop right out. The two big problems are that what ever you pour it onto needs to be incredibly smooth and if you heat it too much, it could be slightly yellow. You could actually make it more narrow than the one made out of plastic shown in your picture. However, if you do that then you need to think about how it is going to balance on the cake.
You would cook the isomalt crystals with a few drops of water until it is the proper temperature. Remove from heat and let it cool about 5-10 degrees. Then pour into the mold. Let set up until it is almost cool and pop out. Done. Paint at will. It is only going to last a few days. Longer if you cover it with an edible lacquer. However, it will not last a week regardless of what you do it. Do not refrigerate under any circumstances unless you are looking to destroy it quickly.
