This is how I typically go at it. It's basic time management. Once you get used to knowing how long something will take you, you get an idea for how to arrange your week. *Bear in mind I'm a SAHM, so I can arrange my days more so than someone who works away from home
Monday - put together and decorate cake boards, get cake boxes set up and ready to go, make any pieces that need to be dried
Tuesday - collect ingredients, work on anything else that can be done ahead of time
Wednesday - bake, wrap cakes in plastic wrap and let sit at room temp
Thursday - AM make ganache, buttercream, fondant, then torte/level/fill cakes, re-wrap with plastic wrap and let sit to give time to settle. PM crumb coat, put inside boxes or wrap loosely with plastic wrap
Friday - finish cakes, bake cupcakes, let cool, bake cake pops (or start rolling them if you already have the cake baked), put in fridge, ice cupcakes, dip cake pops, decorate cake pops, finish cupcakes
Saturday - use the time before delivery/pick up/party to finish any last minute details
