Whenever I made MFF it was always perfect for covering cakes. You have to stop needing in powdered sugar quite early though and then let it set. You stop adding it while it's still quite loose (not stiff), then let it set overnight. You can then add more PS the next day if needed but 90% of the time I never needed too. Also try making the white chocolate version, it really makes an improvement.

LisaPeps, do you have a recipe for MMF with white chocolate you would be willing to share? Thanks in advance.

On number 15, she lists variations. The white chocolate variation is listed there.

Thanks Lisa. I do let it sit over night.... And I've always just added the full amount of ps stated in the recipe. Maybe I should go by feel!? icon_smile.gif thanks for the tip.... I will be making two batches tomorrow so we will see how it goes!
