I am traveling about 2 hours away for my nieces birthday party. I have no clue how I should prep the cakes to make them usable/decoratable on for Friday night/ Saturday. I have to bake the cakes here (actually doing it tomorrow) because I do not have time to do it all before the party. Should I freeze and travel with them in a cooler bag? Freeze now crumb coat right before I leave Friday and decorate Friday night. Everything I am using icing/filling wise is safe out of the fridge. It's an easy Ombre Rose cake but I am so loss about how to get the actual cake their without it unfreezing, sweating, and so on.

Suggestions?

Hi, I drove with my beach ball cake 2 hours this summer. The cake was 2 tiers and the top tier a ball. The cake was completely finished. I keep all my fondant cakes in the frig without ever a problem. I turned the air on in my car and got it very cold and we made it to my destination-Knoxville, TN without a hitch! Each cake was on a cake board. The bottom cake- a drum was also on a 1/2 inch foam board. I duck taped the foam board to a glass plate. I had straw supports in my drum and 1 - 2 wooden dowels driven all the way thru the ball, the drum, and the foam board. I was worried initially, but would do it again if the need be. Hope this helped. (You can see my cake in my gallery.)

I traveled 1400 miles (23 straight hours) with 2 frozen cakes - - one fondant and one bc. I put each one in the fridge the day before I needed to serve and set out on the counter the morning of. They were great and tasted like they had just been baked.

Just bake, level, fill and crumb coat as usual. Box your cake, then double wrap with plastic wrap and then wrap in foil. Freeze. If you're going to decorate after you arrive, put the cake in the fridge on Friday morning and it should be fine to travel for 2 hours. Depending on when you actually decorate, you can put it in the fridge when you arrive - just set it out an hour or so before you need it. Don't unwrap it until you're ready to decorate so any condensation will be on the wrapping instead of the cake.
