Super Smooth Bettercreme? Gumpaste Lettering On Sides?

How do I get super smooth Bettercreme? Also, Can I put red gumpaste lettering on the sides?
Will they bleed? Sorry for so many questions!

I don't use it as an exterior icing, so I don't know about getting it super smooth, but I can tell you that it will cause gum paste to melt and slide off.

It has been suggested that using modeling chocolate is better and that it won't melt, but I haven't tried it, as yet.

I only use Buttercream to ice all my cakes & use Gumpaste & Fondant lettering & accents all the time,especially on the sides of my cakes. I use a "glue" made of a small bit of gumpaste dissolved in water & apply a SMALL amount to the back of the accent with a small food safe.paintbrush. I have never had it bleed, but you need to position it where you want it, it will color the icing underneath it & will be noticeable if you remove & reposition it.

OP is asking about BETTERCREME, not buttercream--2 completely different types of icing.

Bettercreme is a commercially made whipped icing that contains a lot of liquid and air. It reacts completely differently than does a buttercream, so info on buttercream is not at all applicable to Bettercreme.

You can smooth Bettercream with a hot spatula. Dip your spatula in hot water and wipe off the excess water, then smooth as you would Buttercream. Mind you dont over or under whip it though. icon_smile.gif
