The new gas convection oven at the bakery is giving us a hard time. I live in FL and have never cooked or baked with gas - except while camping over a single burner. We don't even have a gas bbq - only charcoal for us. We had to buy a gas oven since the location we're in is going totally green. There are solar panels over the parking lot rafters, reclaimed water for flushing the toilets, and all the freezers/fridges had to be approved for energy efficiency. Thank heavens we also bought a regular oven with a stove top and that has saved us, but we keep looking at the convection with all its wonderful space with longing.
We just turned the thing on two days ago, but the temperature on the dial isn't matching the thermometer we put inside. At first the gas smell was very strong, but that seems to have gone away. Obviously we lowered the temperature on the dial to get the correct reading on the inside thermometer, but then we heard the gas click on or off (you know that poof sound it makes) and the inside temperature spiked again. When we thought we had it, we put cookies in and they spread out like melting ice cream. Plus things don't seem to be baking evenly.
If you been here - experienced that before, any advice would be greatly appreciated. We already called the company we bought it from, so let's see if they come out today.
