Help With A Quick Almong Filling...

I have a customer who requested an Almond filling... Normally, I make a custard, but this is a stacked cake the has to travel pretty far and I get leery with custards in the middle on a 50 mile journey... Does anyone have a good recipe for almond filling... Other than almond buttercream? I'd like to fill with something other than buttercream...

I hate to say it, but the buttercream might be the way to go. You could toast and chop almonds and add them in, or break up chunks of almond paste and add that in to the buttercream. I always like something with a little texture in the filling.

yeah... I was thinking buttercream was the way to go, just hoping for something different.. I didn't think of breaking the almond paste up into it, I usually pulverize the stuff with the shortening/butter until it is smooth... I'll have to try breaking it up into it as well... probably gives a really nice texture! Thanks!!!
