Merange Powder Vs Egg Whites

I have see several different royal icing recipies. some using egg whites and some using merange powder. Can you do fine stringwork using the powder? Or teh already royal icing mixes? Thanks

Stringwork comes out best with fresh or frozen egg white.
When you bake cake, you can steal some whites and freeze them. Just count 2 yolks in place of one egg.

And for stringwork, you should use a little less sugar than you would for flowers, the icing needs to be that tiny bit softer.

Make sure they are pasteurized if guests are going to be consuming the royal icing.
