HI, i am sending you this link from this site. I am saying you cannot cover the cake with fondant. I t is not an italian meringue frosting , be cause it does not have butter. It is just a cooked icing. My mama use to make these for her pineapple cakes when i grew up. I make this icing for my pineapple cakes and coconut cakes also. Maybe some one else has another answer. hth

Hi, i was reading the link. Some people make the italian meringue recipe and yes, you can use fondant over that after chilling first. I think i goes on to say you can use it with the meringue that does not have the butter. Personally, i would be afraid to. hth Hope others chime in.
