Hi everyone!

So, my friend is getting married and she asked if I would make her cupcakes for her guests and an 8 in cake for her and the groom. Now, I've made cakes before..but never a wedding cake..so I'm a little nervous. I have heard that you're supposed to put dowels into the cake to keep it together - I wouldn't need those, right?

Also, I've heard that some people decorate the cake at the reception. Would I be better off decorating it before I deliver it or at the reception, considering it is such a small cake?

And, what about freezing the cake? I should bake it, let it cool, freeze it, put on the crumb coat, freeze it, and then let it thaw (how long to let it sit out for?) and decorate..is that right?

You don't need dowels/ support for a 1 tier cake.

It's easy to deliver such a small cake so you'd be better finishing it then delivering, IMO.

You don't have to freeze it. You can if you want to but it's not a necessity. Freezing adds moisture to the cake, I don't freeze once its iced but others on here have. So it's up to you on that one.

An 8" layer cake doesn't require supports unless it's taller than 4 inches.

Let it thaw before your crumb coat, freezing isn't required after crumb coat, and you left out the step for icing the cake before decorating.

If you bake your cake than let it cool just alittle bit than wrap in well while still warm and put it in the freezer that forces condensation into your cake making it moist, plus you can bake your cake now and not have to worry about baking it the week of the wedding. You will have to take it out let it thaw and than decorate. I love the website cupcakeproject.com they have a vanilla cupcake on there that ive made and even my 23 year old son said they were to dye for they are called the ultimate vanilla cupcake on that website. HTH
