Hi,

I'm making a Tangled tower out of RKT. I plan to cover it with candy melts to get a smooth texture, and then put fondant over the top. Is there anything I need to do to get the fondant to stick to the candy melts? Should I just use some more candy melts or maybe some piping gel? or would some water suffice?

I'd really appreciate any tips. Thanks.

I'm not sure water would work, because of the fat content of the candy melts (although I use water over ganache made with candy melts under my fondant, so who knows). But piping gel would work fine, as would shortening or the traditional apricot jam put through a sieve to remove solids (although I stopped using this because it just made the cake too sweet).

I have problems getting fondant to stick to candy melts using piping gel. Water will make the fondant sticky - that might work. I've only had consistent success with using melted candy melts, but you need to be careful because any bulge will show up in the fondant.

I use piping gel when sticking fondant over chocolate. You need very little gel as it goes a long way.
