Hello everybody,

My name is Vera! I adore all desserts especially cupcakes and recently I've lunched blog where I showcase best cupcake recipes on web, so I've decided to start writing my own cupcake recipes! And here is my first cupcakes I made images for. I called them Pudding & Jam Cupcakes! I still have problem with making quality photos but I hope I will learn this skill to.

The recipe for Pudding & Jam Cupcakes

For the Cupcakes:

2 1/2 cups all-purpose flour
1 1/2 cups sugar
1 teaspoon baking soda
1 teaspoon fine salt
2 tablespoon cocoa powder
1 1/2 cups vegetable oil
1 cup milk
2 large eggs
1 teaspoon white distilled vinegar
1 teaspoon vanilla extract

For the Filling:

apple, apricot or strawberry jam

For the Icing:

Vanilla pudding
2 teaspoon of margarine

Method:

Preheat oven to 350 degrees F, and line your cupcake pans with your liners.
in a large bowl, mixed together the flour, sugar, baking soda, salt and cocoa powder.
With electric mixer beat together the oil, milk, eggs vinegar and vanilla.
mix the dry ingredients into the wet ingredients just until smooth batter is formed.
Fill cupcake liners about 2/3 full.
Bake for about 20-25 minutes or until a toothpick inserted in the center of a cupcake comes out clean.
Using a knife to cut a cone shape out of the top of each cupcake. Place about 1 teaspoon of jam (apple, apricot or strawberry jam) into the empty hole, and then gently put the top back.
While the cupcakes are baking preapare the vanilla pudding according to the instruction on the packing, just put 1/5 less milk than the instructions provides, and when its densely cooked add the margarine and mixed well
You dont have to wait that cupcakes and pudding cool completely before icing
Pour the pudding with the spoon in several layers over the cupcakes .
Dusted lightly with the cinnamon over the pudding for the decoration if you like it.

Hi, Vera. I see you on Pinterest a lot (I think our minds kind of travel in the same direction). Glad to see you here, too! Thanks for the recipe - they sound yummy. And your picture makes me want to gobble them up!
