Hi All,

I need to make a Jungle picnic cake soon. It is a chocolate cake layered with milk chocolate filling.

My question are - how do I make green grass to cover the cake in chocolate buttercream? . My thoughts are as follows:
a) Make green coloured buttercream icing with chocolate extract . Since it is an extract it will have some amount of coco, will this change the colour of the green icing?? I'm not sure - does anyone have any idea?
b) Make green coloured buttercream icing with melted white chocolate to retain the colour and give a chocolate flavour? Do u think this is a good idea or will the taste of white and milk chocolate clash taste-wise in the cake? Also, will thh grass retain it's shape (peaks) if I add melted white chocolate to it?
c)Make a normal vanilla flavoured green coloured buttercream icing and cover the chocolate cake which has a milk chocolate layer inside? Do u think this wud taste good?

Wud like some advise on what is the best option or if u have any other suggestions/ideas.....thanks

I haven't used chocolate extract before, so not sure how that will work.

You can either use a white chocolate buttercream colored green or a vanilla buttercream colored green. Both should taste great with the flavor combo you want.

This recipe will work great for white chocolate buttercream - http://www.wilton.com/recipe/White-Chocolate-Buttercream-Icing and won't be sloppy or hard to pipe into grass.

One begins by NOT assuming that the cake covering icing will also be used for decorations.

Then one can proceed to make icing that is suitable for green grass on a cake covered with chocolate icing.
