How Long Can I Keep Cake Without Icing It (Before Frosting?)

I baked a cake yesterday to fill today and do the ganache. But the raspberries I needed for the flavouring of the swiss meringue buttercream were nowhere to be found at the shops icon_sad.gif Now I'm worried my cake will dry out!! It's a chocolate cake. I'm hoping to find the raspberries at the shop tomorrow, but just concerned about the cakes drying out if I wait too long icon_eek.gif I have wrapped them in cling wrap and kept them cool (but not in the fridge).

Cake can't dry out if air can't get to it through cling wrap. It will be fine.

Wrap it tightly in plastic wrap and freeze it. I've left cake in the freezer for up to 2 weeks and have never had a problem. Just let it thaw for a couple hours before decorating it.
