Bittersweet Chocolate Chantilly And Refrigeration

Hi all,

I'm making a chocolate cake for tomorrow. The cake is baked. I've decided to try a bittersweet chocolate chantilly (bittersweet chocolate, heavy cream, glucose and honey). It's mixed already and in the fridge, to be whipped to stiff peaks tomorrow.

Tomorrow I'm going to fill the cake with some of this, frost with IMBC and lightly decorate. I have to travel about 1 hour with it to the party.

Do you think I need to have it refrigerated at all times? Do I have to keep refrigerated before I leave and then also when I get to the party? (I know refrigerator will be full with food at the party and there's probably no space).

You should keep the cake refrigerated until you get into the car. Drive with the A/C on. That way it will arrive still cold enough to be solid all the way through. After the party, put any leftovers into the fridge (which will have more space than before the party...)
