Tips for sculpting a 3D cake?

I am wanting to use this tutorial on an Elmo cake as a guide to make a hello kitty cake. http://www.zerogravity.com.au/blog/2009/01/how-i-made-an-elmo-cake-part-1/

I am curious how the bottom of the head where it gets larger and overhangs will be prevented from crumbling off?? Please any tips for sculpting cake? Thanks!

Haven't looked at the link but you can do overhags using rice crispie treats (RKTs).
