I am making a double layer 8" red velvet cake for a co-worker. Bringing the cake to work on Friday, cake is for Sunday but we live about an hour from each other so she won't be able to pick it up. My question, what is the best way to preserve this cake and also decorate it?

I was thinking of covering with MMF, putting in box ,wrapping it in plastic wrap and asking her to keep in the fridge until Sunday. My concern with this is how the MMF will turn out after being in the fridge for 2 days. On the other hand, If I use ABC(no shortening), then I am concerned with handling and changes in the weather.

Most important I am concerned with keeping the cake tasting fresh, not dry and safe to eat.

I'd keep it at room temp as long as it doesn't have cream cheese icing or anything perishable.
