Is has been a few years since I have made flowers and now I need to make some for my nephew's wedding cake! I am using gumpaste for these. I use to use fondant only or fondant with gum-tex added. My question is what do those of you with experience use when rolling gumpaste out? I remember a class I took and someone (not the instructor) had me use cornstarch or powdered sugar and the gumpaste was too dry and ended up making a terrible flower. I have use a tiny bit of Crisco which helps but distorts the cutout petals when lifting it off the board. Would appreciate any help.

I use 50-50 powder sugar and cornstarch rolling out for small flowers. I use cornstarch only for working with bigger flowers. I am fast and it works for me. If you are learning, per say, I still would use powder sugar. This is a great way , also, cover you a cake board with white freezer paper(shiny side up). Roll out gumpaste(will not stick) . cut your petals, etc. Try this ,hth

When using gum paste I don't use corn starch or powdered sugar except very rarely and if I do very minimally. I mainly roll out gum paste on a non-stick silicone mat that has a very light coat of shortening on it.

I don't use anything to roll out with , I use the Royal Icing tylose paste that I make myself.

One thing to remember is to roll out your paste then flip it over before you cut it, that way it won't be stuck to the board and you get a neater cut.
