Hi Everyone,
I've got a big problem. I've iced my cakes with buttercream. Now, I'm getting big air bubbles under the buttercream blowing the sides out. What's going on? I've been decorating for years. And, only recently I've had this problem. One or two cakes will have a big area on the side of the cake blow out. I thought it might be because I've frozen one layer and then iced while still half frozen. Yesterday I filled the cakes and let them sit over night covered tightly with plastic wrap. Today I iced them. Now, this evening I have areas that are blowing out on the sides. They've all been iced the same way. With a spatula. This is driving me nuts! Also, does anyone know how long it takes for pearl spray to dry? I've got to stencil these before they go out tomorrow.
Thanks, for all and any help.

This has been talked about every week for months. There's several things you can try. One is pressing down on the top of a filled but not yet crumb coated cake to make sure all the extra air out that may be trapped inside, another is to make sure all layers are torted evenly - in other words no gaps between layers on the sides that you have to stuff icing into to make the sides straight.

Thanks for your help. I'll be more careful with my layers.
