Cheesecake Filling And Freezing Help.

I am making a 4 tiered wedding cake. The bride wants a cheesecake type filling in WASC cake. I found 2 no-bake cheesecake recipes here on CC that I thought I could use as the filling, but then the thought occurred to me that they may not do well with freezing. One is made with cheesecake pudding mix and heavy cream and the other is made with cream cheese, whipped topping, and sugar. Any thoughts?? My other question is: once i get the cakes filled and dirty iced with butter cream can I put them in the freezer like that or will they need covered and if so, how do u cover something freshly frosted in b/c? Same with once I get the fondant on; will they be ok in the freezer as is? I might be able to fit them in boxes and then put in the freezer..... Any help is appreciated icon_biggrin.gif

Your cakes will require to be CHILLED not frozen at all times except when you are actually decorating.

Don't take a chance on freezing because the filling may weep a lot into your cake.
