Hi!
I'm going to be making a cake for my husbands birthday. (shaped as an Xbox)
I want to make everything from scratch.
I'm thinking of a raspberry filling.
I was curious what a (tastey) cake recipe would be that would carve into and hold shape good before I added the BC & fondant.
Also any tips/advice for fondant recipes & fondant making. I don't want to buy to premade kind. I am going to attempt the marshmallow fondant. Just not sure what recipe to follow either.
Thanks in advance!! icon_biggrin.gif

I'm still learning, but I've had luck with Peggy's MMF recipe for years. I've tried several true from-scratch fondant recipes, but none ever work as well. I also have the best luck with store brand mini marshmallows, versus the name brand ones. One other warning about homemade fondant--it sometimes takes several attempts of working with it, and learning when too much powdered sugar is too much, and when too little is too little. Don't get frustrated if one or the other happens, and the fondant seems unworkable. Most of the time, it is fixable icon_smile.gif)

As for recipes, I am still discovering in the scratch department icon_wink.gif I found FromScratchSF's to be the best, but I've not done a sculpted cake yet with it. There is A LOT of great learning information on this link--read all of the posts and the responses, too. http://fromscratchsf.wordpress.com/2011/07/26/white-cake-part-3-with-recipe/#comment-567
