Hello all! icon_smile.gif

I have a wedding cake request, a 3 tier for approx 100 guests. They would like an all gluten free chocolate cake covered in dark chocolate curls with some sugar flowers to match their colour scheme. I've only ever made fondant and buttercream cakes and am not sure about pricing this request. Any suggestions?

Yes, do a search either through the search option on the top right or on Google making sure to include cake central in the criteria. There are 999,999 threads asking about pricing and the responses are pretty much the same. The first page of this forum has 3 similar threads.

You need to simply work out the material and labour costs for making gf cakes and choc curls, and then compare that to your regular pricing calculations for your regular cakes to find out the appropriate difference in price to charge your client.

I second Jason's question as well. Gluten free is a very delicate concept. If you have experience, then great. But if you don't, you need to be careful in the ingredients you use.

But gluten-free aside, there are plenty of threads devoted to pricing. You need to make a point to sit down and calculate what every single item costs you. Then you need to figure out how long it will take you to make and decorate such cake. What you charge per hour is up to you. You also need to account for things like water, electricity, etc. Pricing a cake is not difficult, but you do need to sit down and crunch the numbers.

Surprisingly, I've made more gluten free cakes than I have nut free cakes! icon_smile.gif I've been ok with pricing those ones. I've went ahead and ordered the chocolate curls from Qzina.com as I don't think I would have the patience to roll an amount large enough for 3 tiers! It will no doubt cost a little bit more than doing them on my own, but will save me the time & headache!

I think I've figured out my costs & will be sending a quote to the bride this week.

Why would you order the chocolate curls before you've even sent the bride the qoute? What if she changes her mind about the design or decides to go with someone else? You might end up losing money that way. Unless it's something you use often don't order supplies until you have a signed contract and a deposit
