Will My Royal Icing Spoil?

I know alot of people use merengue (sp?) powder but I do not have any atm.

If I use egg whites (its not to eat but to practice flowers) will it spoil if I store it properly at room temperature. I ask this because I was doing some research online and it seems alot of people for some reason say to not store royal icing in the fridge. Im just not sure if with the egg whites it will go bad or not. TIA!

Real egg white royal icing has been used for sooooooo many years without harming anyone I cannot see why anyone would not use it.
the reason you don't store in the firg is the moisture in a frig makes it break down. Make a smaller amount so you don't have extra; &/or make something with it - flowers, ColorFlo decorations etc.
I don't remember the recipe I used - probably the Wilton one as I taught Wilton for yrs - but I usually reduced the recipe in 1/2 and maybe even in 1/4ths. I know it usually made just a cup or so.

I store leftover royal in the fridge for up to a week , I usually just make up one eggwhite amount. Just make sure you put plastic wrap down onto the surface of the icing so it doesn't form a skin , I also add an extra layer over the top of the bowl as well.

Once it is dry there is no spoilage so there is no need to put that in the fridge as it will melt.

I held egg white royal icing at room temperature for a 3 day road trip. BIG BIG MISTAKE although I was the only one who ate it. I used it to stick dried things together onsite.

On the other hand I keep royal icing in the fridge, in a very tightly closed plastic container with a paper towel on top. Never had a problem that way.
