Leveling Sheet Cake Help Asap!

So for some reason I can never get a sheet cake perfectly level. I am fine with doing round or square cakes but I never have level sheet cakes. They always have dips and plateaus in spots. I am doing a VERY large cake made up for 6 - 12x18 cakes...suppose to look like a football field, so it needs to be perfectly flat. Its also for a huge, important function so its really imperative i get it flat and uniform as can be. I have tried using a knife by hand & the 2 wilton levelers and still doesnt work too good.
ANY advice on this would be amazing.
Ive also tried the smooshing the cake down (after it ocomes out of the oven) method. Altho this works good, its still not perfectly flat and since this is suppose to look like one large cake (made out of several cakes, they arent always the exact same height - so ill end up cutting anyways.

ANY help PLEASE!
Im starting on the cake on Sunday!

Put cake boards in the bottom of your pan then place the cake that will end up the shortest on top of the cake boards and level the cake to the top of the pan. Repeat with the other cakes using the same number of boards you use with the shortest cake.

thanks for the idea.. i guess im kind of confused as to what you mean.....

Putting cake boards in the pan and then placing the cake on top of the boards inside the pan raises the cake up. When the cake is raised high enough over the lip of the pan to allow you to level it by using the top edge of the pan, take your knife and level it.

By using the cake that needs the most taken off of it first, the amount of boards used for that cake will then be used for the other cakes, guaranteeing that all cake are leveled to the same height.

You NEED NEED NEED the magic cake strips to bake with ASAP. The set of four makes strips long enough for large sheet pans. These strips work for up to 12 x 18 and certainly reduce the levelling problem to a minimum.
