Timelines For Making A Wedding Cake

I am making my first wedding cake and I need advice about timelines. I am doing a three tier topsy turvy in black and white with polka dot decorations. I am using Sharon Zambito's method and am going to attempt chocolate ganache under the fondant for the first time. The wedding is on a Sunday. How many days in advance can I bake the cakes, then when can I stack them and cover them and how do you store them in between steps? I am travelling to my parents a few days before the wedding and I'm not sure at what step I should have the cakes before arriving at my parent's house. Please help!!!

Well, not knowing if you work or not, you need to allow yourself at least a day for each step, baking, torting, icing, settling, carving, covering, and decorating. Of course a few of these steps could be combine but to me if you haven't started, you might want to get started. If you are using fondant, the cakes can be stored on the counter because fondant is not fridge friendly of the moisture. Uncovered cakes should be stored in fridge.

I don't work outside the home but I have three kids so I am limited to working on it in the evening when my husband is home.

So is this correct?

Day one: bake
Day two: tort, let settle
Day three: carve and cover in ganache
Day four: cover in fondant

Can I start decorating after I've covered in fondant or do I have to wait another day after that as well?

Also, do I have to assemble the cake and travel with it to the wedding or can I stack it there? Which is easiest and less likely to be a disaster?
