Oh my goodness i just found a website called www.cupcakeproject
.com it has a recipe on there called the ultimate vanilla cupcakes. Well i have been waiting to make them. Tonight i made the batter and it smelled wonderful, as i baked the cupcakes the whole house smelled like vanilla way yummy! Well they just came out of the oven and of course i had to try one , Yep they have the right name they melted in my mouth and i can still taste the vanilla i could for sure eat alot of these. Now to let them cool and put my famous buttercream frosting on them. icon_biggrin.gif

ok lets see if i can give you my recipe for my frosting. first of all you MUST use high ratio shortening thats the biggest secret of all ! only place that i have been able to find high ratio shortening is at a special cake store that i shop at, criso and the such isnt good enough. you can also order the shortening online but thats in large amounts that i dont use enough of yet but if you can only get it from the internet than so be it.

2 cups high ratio shortening
2 cups c and h powered sugar ( dont use the cheap store brand it makes your frosting grainy)
2 tablespoons of meringue power
2 teaspoons wilton butter flavoring
3 teaspoons wilton vanilla exact
10 to 12 teaspoons heavy whipping cream
a dash of salt

start with the shortening in your mixer bowl add butter flavoring , vanilla and the heavy cream all together mix on low for about a minute add salt and meringue power whip for about 30 seconds slowly add your powered sugar alittle at a time until its all in there. now this will make a very stiff frosting i usually want it a bit thinner so i add the heavy cream a teaspoon at a time as the mixer is running to make it to the point where its spreadable or good for frosting cakes or cupcakes. when ive got it how i like it i do whip it for a couple of minutes to make it light and fluffy . use at once or refrigerate but after you put it in the frig it gets cold and alittle stiff, just put it back into your mixer and whip it for a minute it gets light and fluffy again
