Bad tasting white chocolate.

I went to the bulk barn to purchase white chocolate to make ganache and they only had bakers and belgian. So I decided to purchase belgain. I went home to make white chocolate ganache, I must say I followed the recipe 3:1 ratio and the ganache was runny and tasted bad. I ending up throughing it in the garbage, there goes money that went down the drain.

Please recommend a white chocolate brand for me to make ganache.

I use Ghirardelli chocolate chips. It comes in white, semi-sweet and bittersweet chocolate. It makes a great tasting ganache. Better luck next time! icon_smile.gif

It's pricey, but I love this white chocolate; El Rey's Icoa. I've used it in ganaches, pastry creams, cakes, frostings, cheese cakes etc.

When I don't have the money, I also use Ghirardelli in chips or bars. I've used it in most baking applications successfully.
