Can anyone tell me if a cake decorated with gum paste flowers can be frozen or refrigerated?

Depends on how long and how humid your refrigerator is. I use gum paste decor all the time and I keep my cakes in the fridge until delivery. But the longest they're in there is like overnight. Gum paste decor that's really dried won't do much in the way of getting soft like fondant can. I've never had condensation issues with gum paste--but like I said, it's not in the fridge that long. I definitely would not freeze if you don't have to.
