Does anyone know if there is some sort of program or worksheet where I could input the sizes of tiers that I would like to use, and get a visual of what they would look like together? Seems like this would be extremely helpful when designing a cake.

Well I thought I posted a reply but it's not showing so I'm going to try again. It may end up showing twice.
Yrs ago (maybe around 1980) Wilton published a 3 volumn set of books called the Encyclopedia of cake decorating. They each had about 300 pgs and originally sold for about $30. If you can get your hands on Vol 2 there are some 3 or 4 pgs of sketches with various shapes and sizes that can be put together for tiered cakes - both pillared & stacked. They show how many servings each combination serves.

Additionally, here's information on the Wilton Encyclopedia Set. These are out-of-print. They are FABULOUS!!!!!!
A great suggestion that I found on line when I began cake decorating in the Wilton courses in March 2010: Find the old 1970's Wilton encyclopedias on half.com or eBay or other out-of-print sites and buy them! There are 3 volumes, 1, 2 and 3 and they illustrate all the "old" techniques, which of course, were mostly buttercream. They show how to pipe people and animals and all sorts of stuff!
