Can anyone tell me if you can freeze a cake with edible images on it?

I freeze the sheets all the time. Usually just enough to separate the frosting sheet from the back. You will have to remember that when you freeze something it will sweat when it starts to thaw. Where are you putting the frosting sheet. Top or side?
