Help sizing 3 layer cakes

Hi, I've been using Earlenes cake chart for cakes that are 2 layers of cake per tier. However, I really like using 3 layers of cake per tier cause it makes the cake so much taller and gives more room for decorating on the cake. However, how do I increase the serving size for a 3 layer cake? At first I was just adding $16 per tier but I realized that since I charge $4 per serving that means Im only charging for 4 extra servings and i know that a third layer of cake allows for more than 4 more servings. Please help.

It's 50% more cake. Perhaps you should charge 50% more.

Ok, thanks so much. Believe it or not that was my first hunch, but that seemed like it was an over estimate. I think that's what I'll do but other feedback is still welcome.

I wouldn't feel guilty about charging more for more cake. Plus, more room for decorating on the cake means more time decorating the extra space. Since you're using Earlene's generous chart instead of the Wilton industry standard chart (and possibly giving away extra servings for free), you might consider charging even more than 50% for the extra decorating labor to help recoup the cost of potentially giving away free cake.

Another consideration... 6" tall tiers don't fit on standard dessert-sized plates. You could construct with a board in the middle for 3" tall servings.

Do you plan to make all of your tiers 6" tall, or do people have a choice if they'd like typical 4" tall tiers? It would be an option they might like to have to save 50%.

CWR, I do give people an option for a 2 layer cake or 3 layer cake. Typically that is determined when we sit down and design the cake and determine what is required to get the look we want. And you are right, I shouldnt feel guilty for charging extra for extra cake. I guess that's still a mountain Im climbing, Im getting much better though about charging for my work!

You are also right that 3 layer cakes dont fit well on a desset cake. A time or two we cut the slices in half but thats not my favorite thing to do, but you never know what works until you try.
