Could I add in caramel sauce to a cake mix maybe in the pan sort off half way up... to make a chocolate caramel cake

Yes you can. I've done it before with one of Paula Deen's recipes. If I remember right, you bake the first half of your batter for maybe 20 minutes or so, then add your caramel, then the rest of your batter and finish baking it. I'm at work right now and I can't find the recipe online, but it's her Turtle Cake. Maybe someone else has the recipe with them. Good luck!
