I am slowly collecting equipment to put in a future licensed kitchen and just purchased a used commercial convection oven and a used 3-bay sink.

They are both filthy. I'm not afraid of some elbow grease and I got a really good deal on them, but don't know the best way to clean them.

Does anyone have a favorite cleaner for the oven? Can I just use something like "Easy-off Oven Cleaner" or do I have to use something commercial?

Also, the sink has a lot of grease on it. Does anyone have a tried and true degreaser that they use on stainless steel with no problems?

Not sure about the oven cleaner; but get some 'Degreaser' by Stanley/Fuller Brush (if you can find a rep - not sold in stores). best stuff since sliced bread! here's the website:

SOS pads and toothbrushes.

Many stainless steel cleaners are citrus based and may also include a degreaser.

S.O.S pads aren't rust-resistant. The steel wool fibers (not stainless steel) can get imbedded in the surface of your stainless steel contaminating and causing rust which can only be completely removed by re-graining the finish.

A better choice is 3M Scotch-Brite Pads. Use the handle attached to the pad for flat areas and go in the same direction of the grain (unless you don't care about circular scratches and brighter spots on the finish).

After cleaning with Scotch-Brite Pads, you can clean with window cleaner to brighten it up or any citrus-based SS cleaner for a darker/polished look. (The SS cleaner will also "erase" water spots.)
