The big thing now is making the inside of the cake as interesting as the outside. So, I am experimenting with making each layer of cake a different flavor or alternating flavors, such as chocolate and vanilla or strawberry and vanilla. What flavors have you tried together??

Just a few ideas for you:
lemon w/chocolate
butter pecan w/vanilla
butter pecan w/spice
applesauce w/spice
applesauce w/vanilla
spice w/yellow or vanilla
banana w/butter pecan

This is not a new idea. European bakers have always been trained to ensure that the cake itself is perfectly flavoured before they are allowed to ice or decorate. They also layer cake and meringue for nice texture inside the cake.

People generally ask for different fillings--there can be up to 3 fillings in one tier. Adding multiple cake flavours on top of multiple fillings will make for a very confusing cake. So if you have multiple cake flavours, then you need to stick to one filling/icing flavour.

A popular theme with me lately is Neopolitan. I alternate layers of vanilla and chocolate cake with strawberry buttercream and fresh strawberries as filling. Then I frost it with ganache (or whipped ganache).
