Can anyone please suggest a very pipealble frosting. I find the cream cheese butter cream is not firm enough, and I don't want to add 10 bucket loads of icing sugar. What other frosting's goes well with carrot and red velvet cake that holds its form really well . thank you kindly

I use a white chocolate cream cheese crusting buttercream that is a variation of IndyDebi's buttercream that Mamawrobin posted one day. It's in the 3rd page of this thread,

It doesn't have a strong cream cheese flavour, but it taste awesome. I use it on red velvet as well., including piping it on cupcakes.

I use cream cheese, but I keep my piping bags in the refrigerator and I switch them FREQUENTLY during the icing process for those types of cupcakes. I probably hold my piping bags strangely, in that I don't necessarily hold it close to the tip where my hand would warm it up; I'm usually able to just grip the twist I put in the bag to move the icing down. I fill it up again, put it back in the fridge and move to the bag which is already in the fridge.
I can make my cream cheese patterns look just like butter cream using this poorly described method.
