Satin Ice Issue

I am in the process of doing a cake with satin ice and it is cracking - any suggestions on how to fix?

You need to work with it very quickly. That is usually the main culprit with Satin Ice cracking. Roll it out and put it on to the cake immediately.

You may want to rub some vegetable shortening on it as well. Because cracking is a result of being dry.

Shortening won't really help with this issue. If you knead in too much, it can make matters worse.

If you need more working time, you can add about 1/3 Wilton fondant (or even some MMF) to it. It makes a great tasting, easy to work with product.

Make sure that you've kneaded the fondant well before rolling it out, cover it with saran or parchment before walking away from it, and yes, apply it to the cake ASAP.

Wow thanks for this info on Satin Ice. I noticed it cracked on a cake and when I touched it, the fondant was rock hard! It dried stiff. Wonder what happens when people cut into SI covered cakes..
