Hi everybody!

I am making two giant chocolate cupcakes this week for clients. I had the idea of doing the rosettes with chocolate ganache for a glossy look but I am not completely happy about doing this. I am definitely lacking in experience with ganache!

I am just wondering does anybody have any recipes for chocolatey buttercreams/frostings which are glossier than your usual cocoa buttercream recipes to give it a more decadent look?

Thank you!

Hmmm...I have only worked with ganache a couple of times but I'm pretty sure only poured ganache stays glossy even when set. I don't think it would be glossy once it sets in the container and you pipe with it. And I know for sure if you whip it, it loses the gloss.
I have seen and heard (but never used) of an edible lacquer pray or shellac that is used for cake decorating. I know that thebakerskitchen.net carries it. It might work.
Good luck!

Hello! I googled glossy chocolate frosting for piping and here's a link that shows a piped cupcake that was shiny. I haven't used this so I can't say anything about taste. HTH! http://nish-whips-up-a-dish.blogspot.com/2011/07/passionfruit-cupcakes-with-chocolate.html
