I've searched high and low for a good vanilla cake/cupcake recipe. No matter which one I try, it always comes out bland and on the dry side. The only way I know how to fix that is to add dry pudding mix. However, I have a hard time believing that's the only answer to the issue. I believe there's a way to make such a basic recipe like Vanilla flavorful and moist. All help is greatly appreciated!

I omit the peppermint and replace with vanilla bean paste. I also use vanilla bean paste instead of regular vanilla. I definitely do not under bake.

The best vanilla cake/cupcake recipe I've found -- which is absolutely fabulous -- is the one by fromscratchsf (now known as Beyond Buttercream). She did a 3-part blog post on her blog regarding scratch white cake and how to improve it. I've been using that recipe for my go-to white cake since I read those blog entries. The posts were done in February, March and July of 2011. The third posting is the one with the recipe. Very good reading, and a fabulous recipe. I am still waiting for her follow-up post on "until done", though. She is just full of great and tasty information!

I agree with you.....I've been searching for a great vanilla cake recipe and found this recipe on FromScratchSF and decided to give it a try last weekend. Everyone LOVED this recipe!! The cake was moist, flavorful and very easy to make. It's my new go to recipe.

I use 2 tsp (or a little more) of vanilla bean paste. I want to try vanilla beans but I haven't bought any yet. The problem I have with a lot of vanilla cupcake recipes is that they don't have any more vanilla in them than other standard cupcake recipes. I like to put in a fair amount of vanilla to make it really vanilla.
I'll have to check out the other recipe too, but the one I posted is my go-to after many tries with other recipes.
Also, I'm going to try one from a bakery in England. I tried one similar to their vanilla and it was so moist and flavorful. I'll post about it after I make it.
