I do not have a store front but a florist asked me to decorate a dummy cake for his window. I just used butter cream and he set it on a display table for a week before moving it to his front window. Used it for two years in a row for June.
I have a friend that uses royal icing for her dummies.

I have had display dummies on display for over a year, they are covered in fondant, no problems.
