Making Roses With Cream Cheese Frosting

Hi all!
I just had a bride order a bunch of cupcakes and wanted actual roses (Wilton Roses) on the tops. That's not the problem, the problem is that a few of them have cream cheese frosting. I use shortening for my weddings, but I don't know if that will make it stiff enough to hold up. Have any of you done this? Let me know if you have any tips or if it just will not work. Thank you!

You have to find that sweet spot where the Cream Cheese icing is stiff enough to form the rose and refrigerate immediately thereafter. It will also get softer as your working with it, so I usually prepare two or three piping bags and alternate them in the refrigerator.
Have you tried Earlene Moor's Cr Ch B;cream icing recipe? It good for piping and can be stiffened if necessary.
