I want to start making cupcake decorations that are words written in chocolate.
I thought it would be easy, so I gave it a try with candy melts.
Somehow it was a flop. The chocolate was not smooth. It came out of the tip in an unpredictable way. Smooth, then glob, smooth, them glob.
Does anyone know the tricks to this???
What kind of chocolate? What kind of tip/bag???
Temperature?????
What I thought would be easy turned out to be a challenge.

I used royal icing to mke those decorations because I had leftover icing from cookies. However, I know people use chocolate in that way, but I have never written out words. I've made shapes, but no text.
Did you use regular Wilton candy melts? When you say 'not smooth' was there lumps in the chocolate? I would recommend making sure you do NOT heat the chocolate too much as it may burn. Also, i've used a parchment bag to do certain decorations with success, but maybe using a proper tip would help (maybe you did that already). Also, you have to really control your pressure and pipe an even, steady stream.
You may have done all of these things and just had some messed up, weird chocolate.
White chocolate is more difficult than dark.
For any kind, add a little oil (1 teaspoon to 1/2 cup melted).
