I suppose it depends on the situation, but most of the time I would choose modeling chocolate. It's just SO versatile. I don't have my recipes with me right now, but I have used Mike McCarey's recipe and Baking Arts recipe with great success!

Mike Mccarey's modeling chocolate recipe is the one that i use. I have only made choclate flowers with it. I mean like orchids, and not just tiny flowers. hth You can get it on this site , and over the internet.
